This recipe is perfect for personal pizzas, and the best part is that you can customize to you liking!
2 Good & Gather Organic mini pizza Crust
2 small zucchini, thinly sliced
1 clove diced garlic
1-2 tbsp basil pesto sauce per mini pizza
¼ cup feta or Parmesan
Thinly Slice the zucchini set aside
Spread 1-2 tbsp Pesto on Pizza crust
Layer over zucchini slices
Sprinkle dices garlic lightly (optional extra for extra garlic lovers)
Top with feta or freshly grated Parmesan
Bake pizza at 400 for 8-12 minutes. zucchini slices should shrivel and shrink.
Top with sprinkle of arugula and lightly sprinkle or squeeze lemon juice on top.
Let cool and eat!
