Hummus Tomato Crostini

Everyone loves a quick recipe. This Hummus Tomato Crostini is a fresh take on a light lunch or an appetizer for dinner. You also likely have most of the ingredients sitting in your kitchen right now which makes this recipe a go-to.

 

Hummus Tomato Crostini



Ingredients:


Day-Old French Bread

2 tbsp Olive Oil

Diced Cherry Tomatoes

2 tsp balsamic vinegar

Hummus of choice

Salt to taste

Pepper to taste




Directions:

  1. Slice French bread and brush both sides with olive oil

  2. Bake for 5-10 minutes depending on desired crunch at 400°

  3. In a bowl mix the diced tomatoes with the balsamic vinegar, along with a tsp of olive oil and salt and pepper

  4. Once cooled, dollop crostini with your favorite hummus, I used Roasted Red Pepper

  5. Finally, top with the tomato mix
