Asian Chicken Bowl

This healthy take on at-home 'take-out' will satisfy your cravings. With all the classic flavors of delicious Asian cuisine, such as ginger, sesame, and sriracha, but less of the unhealthy additives.

Get creative and add your favorite toppings!

 

Asian Chicken Bowl

Main Ingredients:

4 boneless skinless chicken breasts

Whole grain rice

2 broccoli florets

2 tbsp olive oil

2 tbsp vegetable broth


Sauce:

2 tbsp Ketchup

2 tsp Sesame oil 2 tsp garlic minced 2 tsp ginger minced 1/4 cup honey 3 tbsp brown sugar 1/2 cup low sodium soy sauce Toppings: 2 tbsp rice vinegar

1 tbsp sesame seeds 1/4 cup cold water 2 tbsp sliced green onions 2 tbsp cornstarch

Sriracha


Directions:

  1. Combine sauce ingredients in a bowl and add to crock pot, along with chicken breasts (Note: This step can be done on the stove, simply dice chicken breasts before cooking)

  2. Cook on high for 4 hours or low for 6 hours

  3. Cook rice to package instructions

  4. Sauté broccoli by adding oil to pan, then add vegetable broth to pan and cover for 20-30 or desired taste.

  5. Shred and remove chicken, then add the cornstarch to the cold water in a separate bowl and then mix into leftover sauce in crock pot until the mixture thickens

  6. Layer in bowl: rice, chicken, broccoli, sauce, and toppings
