Hearty Energy Ball Pancakes!

Need a little extra energy today?

Try this pancake recipe that is sure to fuel you for whatever today has in store for you!


 

Energy Ball Pancake

In a Large Bowl Combine:

10 oz Ready-to-Make Pancake Mix

2 cups Oats, (You can use gluten free)

1/2 cup Hemp Seed

1/2 cup Ground Flax Seed

(You can use regular flax seed, I use ground for texture. You can also add in chia seeds NOTE: If you use chia seeds you will need to add additional liquid as chia seeds soak up liquids. I recommend adding 1/4 cup of liquid at a time until reaching desired consistency.)

2/3 cup chocolate chips


In a Bullet or Average Blender Combine:

3 cups Liquid. I use almond milk. You can use any nut milk, water, or regular milk.

1/2 cup Peanut Butter

2 scoops Vanilla Collagen Protein Powder

Blend it all together then pour the mixture into the bowl.


Stir everything together until it’s well combined. These are thicker, heartier pancakes. If you like your batter thinner add more liquid 1/4 cup at a time until you reach your desired consistency.


Once everything is mixed, let the mixture sit for 10-15 minutes.


Get your griddle or pan preheated on medium heat. Then add the pancake mixture. You’ll need to use a spoon or spatula to to spread out the batter. Let it cook for 2 to 3 minutes until the edges are browned. Flip the pancake and continue cooking until golden brown on each side. Cool on a wire rack. Pack in an air tight container and keep them in the fridge or freezer.


Yields between 15-20 medium cakes.

*Ingredients may need more or less based on desired texture.


 

Variations:

There are a lot of variations for this recipe. Instead of adding peanut butter you could add a banana, or pumpkin purée. Instead of adding chocolate chips you could add nuts or coconut. Be creative, have fun, and let us know what you think!
